My mom used to make these shortcake and biscuits and they were good. But when I got old enough I took over making them and they were great!! I added a little more shortening than the recipe called for and took my time cutting the shortening into the flour, sugar, salt, etc. mix then added the liquid ingredients. These biscuits came out of the oven and almost fell apart, they were tasty, and soft. We topped them with butter only or butter and jelly or strawberries. I guess they could be used with anything.
We used the recipe to make biscuits to go along with meals, for making pizza dough, strawberry shortcake and many other things. These biscuits were made from scratch, no box mix, all fresh ingredients. Sometimes I ate the mix before adding the liquid items to see if it was good and pinched it together and see if it held together then it was good to go. I also tasted the dough after I finished mixing it together to see if it was okay or needed a touch of something before it was baked.
Since my mom liked my biscuits best, she would never make them again because I had to make them. I have been making the shortcake and biscuits on my own since I was 14 years old. My dad also liked my biscuits. Sometimes, I would make a double batch to have some of them leftover to eat alone or with other things because they tasted so good hot or cold. I still love them but don’t make them as often as I used to.
Back when I used to work for the USPS, I worked the 4:00 pm to 11:00 pm shift. So when I got home it was my evening and I would make my biscuits and then call my mom and dad (they were retired) to come over to have some hot biscuits since they lived close to me. They would love to come over and we would enjoy eating the hot biscuits.
These shortcake and biscuits are way better than anything you can buy in a store or made with ready made mixes. I know ready made biscuits are easier to just pop in the oven to bake but mine take longer to make but are much more delicious and wonderful.
The Full Recipe for Shortcake and Biscuits is below:
2 Cups flour
1/2 tsp salt
2 T sugar
4 tsp baking powder
4 T shortening (heaping)
1 egg
1/2 Cup milk
Sift dry ingredients, cut in shortening, add beaten egg to milk and then add to dry ingredients to make a soft dough. Bake in a hot oven 20-25 minutes.
